Spicing It Up- Making Dinner a Little More Exciting

Sometimes dinner for us is the not-so-exciting thawed Chicken Noodle Soup from the freezer.  Come on guys, I know I'm not the only one that prepares are boring meal every now and then... sometimes sanity is more important, ya know?  

A couple hours before dinner (a few nights ago) I got this Challah Bread started and let it rise.  The link takes you to a recipe for "Bread Machine" Challah Bread.  I don't have a bread machine... without one, all you have to do is mix the ingredients (only half of the flour at first) with a mixer, add the remaining flour 1/2 cup at a time, and knead for about 10 minutes with your hands.  (less time if you are using something like a Kitchen Aid mixer dough hook) Don't have time before dinner to get all that done?  You can actually refrigerate the dough for up to 24 hours, so its something you could easily mix up and knead the night before!  When you pull it out of the fridge, you would just split it up and braid like the recipe says.  You might have to let it raise at that stage a little longer while the dough gets closer to room temp.

My family was SO impressed with this braided bread... little did they know it was super easy to make... Everyone ate every bit of their dinner, and we pretty much wiped out this loaf of bread.   


I made some Potato Soup (minus the meat) yesterday for lunch... I guess we're into soups lately :)  For the extra "kick" I made these mini cornbread muffins to go with them.  Of course the girls loved peeling the paper off of them.  Its the little things that make a difference!  (If you are on a tight schedule, just mix up the dry ingredients the night before and that cuts the prep time by a lot.)


All this to say, it's sometimes that extra thing that will help you and your family fall  in love with that boring meal.  And the best part is that the chicken noodle dinner only cost us about $0.50 and the Potato Soup lunch about $2!
