Whole Foods and Trader Joes Deals- 9/30



As you may know, Whole Foods has been a bit of a mystery to me as far as matchups and deals are concerned.  There's not really a "sale circular", but there kind of is.  Sales vary by state or region.. and sometimes store- and there is no official coupon policy that I know of- best to check with customer service of the store you shop at.  The best list for deals I have found is over at The Thrifty Mama!

Faithful Provisions has a great list up for Trader Joes also. (I loooove that store!)  Be sure and check out "Trader Joes 101" here.  Honestly, I didn't realize that TJ's would take manufacturer's coupons (makes sense though).  I will start adding their deals on my list of stores to cover!

Tuesday's Timesaver- Beans, Beans the Magical Fruit




I suppose today's timesaver tip is more about saving money than time, but maybe it will help demolish the myth that it takes FOREVER to cook dried beans.  Its really not that bad when you use the "quick soak" method.. and its not like you have to stand there for two hours watching them soak :)

Dried beans are a frugal food, and so convenient to keep on hand when cooked!  Cooking and freezing beans is something I love to do because it makes it so easy to toss into your dinner dish or soup.  One of my favorites are garbanzo beans that I can put in the blender to make hummus or as a nice addition to my salad. Yes, up front it takes longer to cook than it does to open a can, but having these on hand in the freezer is so easy and much less expensive.

You always want to start by sorting through the beans and rinsing to make sure there are no small stones or debris in the mix... I don't know about you, but I don't like crunchy chili. :)  Put your beans in cold water (about 4 cups to every 1 cup of beans) and bring them to a rapid boil.. then cover and remove from the heat for 1-2 hours.  Throw out the soaking water, replace with fresh water and then cook!

By flash freezing the beans, they won't stick together in your bags.  Drain the water out and lay in a single layer on a wax paper lined cookie sheet.   Freeze for about an hour and then put them in your freezer bags.  Enjoy!

Monday's Meal Plan- The "Bring the Restaurant Home" Edition



I am changing things up a little this week :)  I am going to try to "bring the restaurant home" in some of my meals.  We have been SO busy that the times we do have to just enjoy family, we try to get out of the house.  Many times that will include a cheap meal out... but as we all know, even a cheap meal out is more expensive than just eating at home.

So.. In 3 of the meals this week, I'm going to make them more fun by creating meals that are similar to a few of our fav places to eat!

Monday: Fish Tacos (alaskan cod is on sale at Kroger this week... also cabbage is in season right now) with homemade salsa and chips (Blue Coast Burrito)
Tuesday: Homemade Mac and Cheese with ham, big salad (feta, red onion, mushrooms, spinach and an olive oil and apple cider vinegar dressing.. our fav!)
Wednesday: Grilled Burgers and Homemade fries... (5 Guys)  Not sure if they have milkshakes or not at Five Guys, but we'll do those too :)
Thursday:  Chicken Salad Sandwiches (chopped chicken from the freezer, grapes, walnuts, celery, mayo, salt/pepper)
Friday: Cheese Fondue, mushrooms with a cream cheese filling and Chocolate fondue (The Melting Pot).. still looking for yummy recipes!

Saved 74% on Organics- Coupons CAN Work For Your Family!



Since triples at Kroger and Harris Teeter are over, I won't go through each item here, but wanted to give you a picture of how couponing can work for your family, even if you eat lots of organics and produce.  I got all of these organic products worth over $19 for $4.12!  I want to point out that I didn't use regular everyday coupons for any of this (although organic/all natural coupons are becoming more popular).  I used coupons from a Kroger home mailer and the Mambo Sprouts booklet.

A common myth is that "there are never coupons for food we eat".  Stay open minded about finding coupons that work for your family and trust me, you'll find them!  Between printables, mailers, inserts, and even just calling your favorite organic companies to inquire about coupons, you are bound to find ones that work for you!

I know its not Saturday, but something came through my inbox that I wanted to share. :)  Its an opportunity called Join My Village to bless women and girls in Malawi through General Mills and CARE (a poverty fighting organization).

Malawi is both densely populated and underdeveloped.  According to this email, the life expectancy there is just 44 years of age and they experience about 89 deaths per 1000 in infancy.

Tuesday's Timesaver- Soup!



Are you ready for another timesaver tip?!  I loooooove this one!  Last night (per my weekly menu plan) was supposed to be "fend for yourself night".  I have a mild head cold and just didn't want to cook.  I forged ahead anyway and in 15 minutes I had a DELICIOUS soup on the table!  Soup is a great timesaving dinner idea- here's how I did it:

I went to my freezer and pulled out corn, peas, chopped chicken, and broth (I always freeze the broth when I boil any kind of chicken- such a great money saver).  Then got some rice out of my pantry.  Thaw the broth at least half way, then toss everything in the pan including some salt and pepper.  As soon as your rice cooks, its done!  And it was so yummy!!  I could have added some other veggies, but again, I was going for ease last night :)

I did this the other night with tortilla soup.  Start with the chicken base, add corn, blackbeans, chopped chicken from the freezer, chili powder, cumin, salt/pepper- serve with cheese, sour cream, tortilla strips or chips and cilantro.. YUM!!!  You can also add some tomato sauce or salsa to the cooking soup as well.

Just get creative with that broth in your freezer- its a great base for so many yummy meals! Some other chicken based soup ideas include:
  • Chicken Artichoke (one of my favs!)
  • Chicken and Dumplings (not exactly soup, but close.. and easy!)
  • Cream of Chicken
  • Chicken Noodle
  • Thai Chicken Curry Soup- use coconut milk, chicken stock, green peppers, chicken and green curry to create a quick yummy thai-type soup that you can serve over rice.  Let me know if you find an actual recipe for this one that is easy!

Monday's Meal Plan



Just an average busy week here in our household this week, but I'm not feeling especially creative so there's not a whole lot to get excited about here, haha.  Thankfully our fridge was fixed and we have been able to get back into the groove of normal life!  Here is the plan for the week!

Monday: "Fend For Yourself Night" haha.. we ate a late lunch and this is what we call it when mommy doesn't want to cook.  Of course I don't make my 3 and 5 year old fend for themselves, but you get the idea :)
Tuesday: Chicken Noodle Soup, Cornbread (from the homemade mix I made a couple weeks ago) & Salad
Wednesday: Taco Pizzas (pizza stuff on a tortilla), cut up veggies
Thursday: Grilled Chicken, Twice Baked Potatoes, Salad
Friday: Baked Ziti (making same meal for someone that just had a baby.. its my go-to recipe... thanks Ambra), Steamed Chard from the garden

Lunches: Quesadillas (found a GREAT new Tortilla recipe HERE.  I added more water than it called for and used oil instead of shortening), Mac and Cheese, Tomato Sandwiches, Chicken Salad
Breakfast: Bagels, cut up apples (they are cheap right now!), Oatmeal and Toast,
