Monday's Meal Plan- the Tuesday Edition
So here is the meal plan in all its glory :) Actually not feeling too inspired this week and have really overdone the whole mexican food thing so we're going to take a break from it this week.. we've had nachos for lunch for the past 3 days, haha.
Tuesday: Chili (making extra beans to freeze for later) and Cornbread (from my mix)
Wednesday: Baked BBQ Chicken, Twice Baked Potatoes, Salad
Thursday: Chicken Stir Fry with Rice
Friday: Turkey Lasagna Roll-Ups- I'll add spinach instead of broccoli
Breakfast- Time to make bagels again- (I don't have a bread machine, but you can make it without by just letting it rise a couple times), banana bread, oatmeal and cream of wheat
Lunch- Leftovers, Chicken Salad, Turkey Noodle Soup
What are you guys making?? I need some inspiration!! :)

ReplyDeleteI would love a little more detail about making the bagels without the bread machine. Do you just mix by hand, let it rise, kneed, let it rise again? I am totally new to bread making. Thanks!
ReplyDeleteI just kneed the dough for 5-8 minutes (or less if I'm doing it in my kitchen-aid mixer) and then cover it with a dish towel in a mildly heated (but off) oven. Let it rise until doubled, push it down and let it rise one more time. That is the point where you would pick up at the shaping the bagels part. Good luck!
