Tuesday's Timesaver- Twice Baked Potatoes
So it is still technically Tuesday, although I normally try to do this earlier in the day :) Haven't been home a whole lot today- thanks for hanging with me!
I love this tip for one of my hubby's favorite sides: Twice Baked Potatoes! They are always kind of a pain to make... bake the potatoes for an hour, then scoop them out, mix them up with butter, etc.. and put them back in the oven to bake again. Well, next time you find good, big potatoes on sale, wash and bake several of them and do everything up until the "baking again" step. At that point, you can freeze them! Put them on a cookie sheet to freeze through and then you can put them in a freezer bag to store. You'll just cook them a little longer (40 minutes or so) on 350 degrees when you pull them straight from the freezer.
I never really follow an exact recipe, but I generally add butter, a little milk, salt, pepper and cheddar cheese to the potato insides. Sometimes even cream cheese :) Mix together and scoop back into your potato skins. Then freeze as I mentioned before. How awesome is that for an easy yummy side for dinner?!
