Due to our Electricity problem a few days back, I am just now getting a meal plan together for this week! Can't wait to start over on Monday! I don't usually plan through the weekend because things are usually super laid back.. and I like not having that part of the week planned out :)

- Wednesday (yesterday)- Burgers, homemade buns (tried a new recipe and LOVE it), sweet potato fries (I rinsed and then parboiled them first before baking at 450 degrees- they turned out better than normal), Chard
- Thursday- Tortilla soup, nachos
- Friday- Steamed artichokes with lemon butter, Chicken and Rice (recipe below.. its the best!)
Chicken and Rice:
2 tbsp Butter
1 c. Rice
2 1/2 c. Chicken Broth
3/4 c. chopped chicken (grab it from your freezer! :)
1 tsp dried parsley
salt and pepper to taste
Melt butter in large frying pan w/ lid on medium heat. Add Rice and stir until it starts to brown. Add Chicken Broth, Chicken, Parsley and Salt/Pepper. Bring to a boil, turn heat down and cover until rice is tender. So yummy!
